Bran Flaxseed Muffins

I got this recipe on the back of Bob's Red Mill Organic whole ground flaxseed meal package.  You can also buy organic flaxseed golden or brown in bulk and gently blend the seeds into meal. 
Flaxseed is a must have high fiber plant that gently scrubs out the intestines.  Flaxseed is also high in antioxidants as well as offers a plant version of omega-3!  2 tablespoons ensure effective benefits from this seed.  This recipe is a satisfying way to get some flaxseed into your diet.  Eat one muffin in the morning or like my beloved....eat them throughout the day.
This recipe, adored by my honey, may require a bit of prepping but the muffins are full of goodies that you can play around with adding yummy substitutions of your liking.

1 1/2 C Unbleached white flour
  3/4 C Flaxseed meal
  3/4 C Oat bran
     1 C Brown sugar can be less if u prefer less sugar
     2  t Baking soda
     1  t Baking powder
   1/2 t Salt
      2 t Cinnamon
1 1/2 C Carrots shredded
      2 Apples peeled and shredded
   1/2 C Raisins (optional)
      1 C Nuts shopped
   3/4 C Milk
      2 Eggs beaten
      1 t Vanilla

Preheat oven to 350 degrees F.  Lightly grease muffin tins or use baking cups; set aside.  Mix together dry ingredients in a large mixing bowl.  Stir in carrots, apples, raisins and nuts.  Combine liquid ingredients together.  Pour liquid ingredients into dry ingredients.  Stir until moistened.  Don't over mix.  Fill muffin cups 3/4 full.  Bake at 350 for 15-20 minutes.  Yields 15 muffins.
